Air bricks serving any remaining void stay clear.

Can the kitchen sit in the middle of the plan with no window?

Yes. A kitchen needs mechanical extract rather than a window, ducted to outside air at the rate the Regulations set, and building control checks ventilation as part of its inspection. What the position does affect is the duct run, because a long or twisting route loses performance, and the terminal has to land somewhere acceptable on the elevation.
